I MUST be honest, I find cooking with spices, and, in particular, Indian/African influenced spices, a bit of a minefield.

Yes, making a simple curry can be easy, creating something more complex where the technical use of how much spice and how long to cook for can be quite difficult. This is a dish I didn't create, but copied and changed to make it simpler.
