SAFFRON is the most expensive spice in the world and is one of the most charming and pleasant flavours. It takes 20,000 crocus stigmas to yield just 100 grams.

The varieties on sale in this country come from the plains of La Mancha in Spain, where great fields of purple flowers stretch out into the distance every autumn. For a few weeks everyone prays for good weather as heavy rain or a violent storm could ruin the crops.
