THIS is a great dish I use on the barbecue at home onmany occasions, the salmon takes very little marinating and the accompanying basil and mint creme fraiche works incredibly well - in fact, you can use the creamwith a number of other grills such as lamb and chicken.
Remember when cooking the salmon don't try and flip it over too soon, develop a crust on the fish even it is slightly charred - this will hold the fish together and avoid it becoming flaky.See the full content of this document
