IF philosophy is a walk on the slippery rocks, restaurant philosophy is something like a tightrope walk, on a piece of dental floss, above Niagara Falls, with a toothpick to help you balance. In other words, prone to disaster.

Yet it's everywhere. Go to any town and you'll find restaurant philosophers to be as common as chefs. Before long, everyone will be doing it' your local truckers' cafe will put a laminate over the fryer saying: "We think, therefore we serve artery-clogging fry-ups seasoned with fag-ash."
