INGREDIENTS. 2 teaspoon peanut oil. 2 cloves of garlic, crushed. 500g chicken breast, uncooked, skinless, excess fat trimmed, cut into 2cm cubes. 2 portions of stock cube, chicken, dissolved in 300ml hot water. 2 tablespoons of soy sauce. 2 stick celery, trimmed, finely chopped. 250g Amoy Bamboo Shoots, canned, drained. 250g water chestnuts, canned, drained. 1 1/2 level tablespoon cornflour. 320 g Rice, white, cooked, kept warm. 50 g cashew nuts, roasted METHOD.
