IT'S time to buy sweet Jersey Royals. In season from April to June, these potatoes are in a class of their own. We have two recipes to whet Royal appetites, starting with Jersey Royals crab cakes with chilli sauce. This recipe provides enough for a starter for four or a delicious main meal for two. CRAB CAKES 300g crab meat; 150g crushed, cooked Jersey Royals; 5g chopped coriander and parsley; 250g flour; 1tsp Dijon mustard; 2 eggs; 150g breadcrumbs; 2tbsp chopped mixed herbs; juice of lemon; 100ml milk; 2 spring onions; 1tbsp olive oil; salt and pepper. For the sauce: 200ml water; 4tbsp sugar; 4tbsp rice vinegar; 4tbsp tinned tomatoes; 1tbsp chopped red chilli; 1tsp salt; tsp ground white pepper.

. ? Mix crab, crushed potatoes, lemon juice, olive oil, onions, egg yolks and Dijon mustard. Divide into 12 (if too soft chill first). Dip cakes in egg whites and a little milk, coat in breadcrumbs mixed with herbs. Heat oil, cook cakes for 5 minutes, turning. Drain, serve with salad garnish and sauce.
